The bakery makes naturally leavened bread and has the distinction of baking loaves in the late afternoon, so that you can take one home right out of the oven for dinner. Or so I hear. Years ago I tried Chad Robertson's loaves when he up in Point Reyes. At the time, he had a wood fired oven and had built a strong following (a friend took me there on a visit). In fact, a picture of him in front of the hearth with a pile of dark crusty loaves graced the cover of a timeless baking classic, The Bread Builders: Hearth Loaves and Masonry Ovens . Many years later, Robertson now has his own book, Tartine Bread . He writes: During those early years in Point Reyes the small bakery was a laboratory for three ingreidients and a world of possibility: flour, water, and coarse grey salt from the Guérande in southwest France. I made most discoveries by exhaustive trial and error, over time gathering each lesson into a simple approach based on what I had learned. The approach was not rigidly scientific, but results were documented by concise shorthand notes and photos of the bread on days when something notable was achieved in crust or crumb. Yup, a 6 x 10 wood-fired bread oven that functions with a belt loader. It's pretty cool. The efficiency it brings to the baking process and the overall benefits to the bread still continues to amaze us.

What really puts this town on the map is the New Glarus Brewery. The brewery is outside of town on the gorgeous rolling countryside, very close to our campgrounds. It was a sweltering hot weekend so on the second day our group decided to take a field trip to the brewery for some air conditioning and cold brew. Spotted Cow, Fat Squirrel, Totally Naked, Moon Man, and Stone Soup are a few of their selections, and bonus, they use 100% vegan ingredients and brewing techniques. To go with the beer they were cooking up personal size pizzas in a brick oven outside.

The pies aren't the familiar thick bread, laden with mounds of cheese and pepperoni; rather, they're covered with a splash of sauce and a light sprinkling of cheese, then topped with vegetables — mushrooms, parsley, olives or artichokes — and maybe a slice or two of prosciutto. The Italian way. Delizioso.
