Tour Town Village visit - by Provence Beyond
- La Tour, France, Towns and Villages in Provence, Cote d'Azur and Alps of the South of France -A four communal (communal oven) is located in a small street just off the square. The oven dates back "over a hundred years" according to the baker, and is still used daily to bake the bread for the village. The room with the oven smells, of course, of fresh bread and pizza. A table holds several glasses recently emptied of red wine; this is a social stopping point for local people going to or from the square.

- Maurice Bal dusts a speck of flour from his thick woolen beret and with broad, rhythmic motions sweeps large, crackling rounds of sourdough bread from the wood-fired oven. He and his wife, Paule, working side by side, proceed quickly and nervously, arranging the dozen fragrant and thick-crusted loaves to cool along stone benches spread with golden straw. Wasting no motion, they refill the brick-lined oven with rustic bread tarts, showering them at the final moment with onions, apples, moist sugared plums, even hand-cracked walnuts. It's 9 A.M. on a gray day in Bugey, a remote patch of southeastern France in the department of Ain. For the first time since the Bals rose in the dark at 5 A.M., they have a chance to catch their breath, to smile, to chat about their lives and the bread rituals of this quiet region at the edge of the Savoy.

Rural architecture: the ovens
- Every village of the Aosta Valley was provided with almost a communitarian oven, where the families baked in turn the rye bread one's own use, generally once a year, at the beginning of winter. The oven was situated inside the village and its size was proportional to the yearly need. A communitarian oven baked at the same time from 30 to 120 breads and, if the village was very big, it was possible to find there more than one oven.

Archaeology, experimental archaeology and ethnoarchaeology on bread ovens in syria
- This article explores the relationship between the archaeological remains of clay ovens excavated in the Iron Age level at Tel Hadar, Israel and modern socio-cultural behaviour linked to clay ovens used for bread baking. After a short introduction on one of the excavated ovens and the precise report of one experimentation with local people, most of the text describes my ethnoarchaeological observations from the past five years in Syria. Through a study that combines archaeology, ethnoarchaeology and experimental archaeology I documented techniques of construction, differentiated various types of ovens and recorded their culinary and social function. Based on this research a worksheet has been developed to maximise the potential for information retrieved during the excavation of clay ovens.
